We had some cold weather here in North Texas this last weekend and we even saw snow! Even though it didn’t stay long we loved it!! Cold weather makes me crave a hot bowl of soup so I was excited to make some homemade chicken noodle soup. With these busy work and school days it’s always so helpful to use my crock pot. You can definitely make this on the stove too and use a rotisserie chicken that’s ready to go. I just add to the mix after everything is brought to a boil. This recipe makes enough for 4-6 servings so feel free to adjust to your family.
2 boneless skinless chicken breast
2 carrots, chopped
2 celery stalks, chopped
1/2 cup chopped onion
1 garlic clove, minced
1 1/2 tsp thyme
1 tsp black pepper
1/2 tsp salt
2 drops lemon essential oil (optional but I love the flavor it adds)
6 cups chicken stock
1 – 1 1/2 cups of egg noodles
Place your chicken on the bottom of your crock pot dish and layer with onions, garlic, carrots, celery. and seasonings. Pour your chicken stock over the top and add 2 drops of lemon essential oil if using. Cook on low 6-8 hours or high on 4 hours. On the last 30 minutes shred your chicken in the crock pot ( no need to remove and shred) and add your noodles. Cover and finish cooking and let sit for 10 minutes after cook time. Such a hearty and yummy soup for a cold day! Perfect for those times your feeling under the weather too.
