Farm Fresh Pickles

July 19, 2019 · Leave a Comment

We decided to finally make some farm fresh pickles. Lots of yummy cucumbers and fresh ingredients like garlic and dill and you have a mason jar of goodness! I definitely played around with the ratio but this is what we have decided that we love best! This recipe makes 4-5 mason jars about 12 oz size. Make sure to sterilize you jars and have them ready. Let's make the brine and while the brine is boiling you can cut your cumbers and fresh ingredients. This part is great for the kids to help too! For the brine you will need the following. Just mix all together … [Read more...]

Mexican Street Corn Salad

July 4, 2019 · 2 Comments

Have you ever had Elotes or Mexican street corn salad? Its absolutely, shut the front door, delicious goodness. When we moved our family we also moved from several of my favorite restaurants with yummy dishes like this. This girl loves her food and I was determined to make my own Mexican corn to devour at home. This salad is slightly spicy with tangy lime and cilantro all happily married together in one dish. It's a great dish for those potlucks or cravings for two. I wanted a quick and easy dish so I use frozen corn but you can use fresh corn as well. First, I … [Read more...]

Happy Fall Ya'll!! I love the cool weather and crisp leaves that fall brings. I especially love all the soups that we can make during this chilly season. I have several that I love but one of my all time favorites is creamy chicken enchilada soup. I have tried several different variations but this is our absolute favorite! Just so you know it does have cream cheese in which brings a rich heavenly goodness that even those that do not like cream cheese will not even know if you don't tell them. Believe me I have one at home but I am not naming names! I cook mine in … [Read more...]

Cold Winter Days and Warm Soup

January 3, 2018 · Leave a Comment

Goodness this holiday season flew by but I held tight to every moment with my family. We have had some cold winter days this last week in Texas and that could only mean warm snuggles in cozy sherpa blankets and homemade chicken noodle soup. One of my favorite memories with my grandmother was cooking in the kitchen and all of her meals were amazing. I don't have her exact recipe but I love the one that I have made for years for my family after much alterations to ingredients finding the perfect melody of flavors we craved. I hope you love it too! I prefer to cook my … [Read more...]
