Chicken Tortilla Soup

I love Soup. Especially on a cold day. I make this quick and easy Chicken Tortilla Soup and wanted to share. I hope you love it too! Here is what you need:

2 cups cooked chicken  { I use shredded roasted chicken or cut up grilled chicken}

2 carrots, diced

2 celery stalks, diced

1 small to medium onion diced

1 tablespoon garlic

1 can of diced tomatoes with green chiles

1 can low sodium black beans, rinsed and drained

2 tablespoon of chili powder

2 tablespoon of cumin

1 container 32 oz low sodium chicken stock

1/2 cup water

1/2 cup chopped cilantro

tortilla strips or chips

avocado

Dice up your carrots, celery, and onion and saute in 2 tablespoons of butter or olive oil. I personally like real unsalted butter. Cook for 10 minutes and then add garlic. Cook for 5 more minutes then add your cooked chicken. Heat through for 5 more minutes. Add your black beans, diced tomatoes and green chiles, chili powder, and cumin.

Take 1/4 cup of your chopped cilantro and put in with your cooked veggies and chicken. Add your chicken stock and water. Bring to a boil then reduce to low, cook for 20-30 minutes { your just heating the soup through and letting the ingredients mingle together.

Once your soup is ready scoop into bowls, sprinkle with cheese, add crushed tortilla chips, and avocado {if you love like me}. Enjoy!!
