Goodness this holiday season flew by but I held tight to every moment with my family. We have had some cold winter days this last week in Texas and that could only mean warm snuggles in cozy sherpa blankets and homemade chicken noodle soup. One of my favorite memories with my grandmother was cooking in the kitchen and all of her meals were amazing. I don’t have her exact recipe but I love the one that I have made for years for my family after much alterations to ingredients finding the perfect melody of flavors we craved. I hope you love it too! I prefer to cook my soup in the crock pot so the vegetables and chicken are deliciously tender.
2 boneless chicken breast
3 carrots, peeled and diced
3 celery stalks, peeled and diced
1 small yellow onion
1 tbsp of ground black pepper
1 tsp of sea salt
1 tsp of parsley ( dried and works wonderful)
1 1/2 tbsp of thyme ( dried works wonderful)
1 bay leaf
1/2 tsp of lemon juice
2 cups of Essenhaus home style noodles or egg noodles ( this brand is at Walmart)
8 cups of chicken stock ( I use Orrington Farms Natural Broth Base. It’s powder based. I just add my water to the crock pot with all ingredients and follow directions for amount of water used)
Add all ingredients to the crock pot with water and stock and set on low for 8 hours or high for 4-6 hours. The ;last 30 minutes shred the chicken in the crock pot and add two cups of home style noodles. Cover and let simmer with the noodles.
Go snuggle up with a warm bow of soup and enjoy!
