Happy Fall Ya’ll!! I love the cool weather and crisp leaves that fall brings. I especially love all the soups that we can make during this chilly season. I have several that I love but one of my all time favorites is creamy chicken enchilada soup. I have tried several different variations but this is our absolute favorite! Just so you know it does have cream cheese in which brings a rich heavenly goodness that even those that do not like cream cheese will not even know if you don’t tell them. Believe me I have one at home but I am not naming names!
I cook mine in the crock pot on low but I have cooked it in my instant pot too when I was craving it and didn’t want to wait until the next day. Just adjust your cooking times. Here is what you need below.
3 boneless chicken breasts
6 cups of chicken stock
2 cans of diced tomatoes and green chiles such as rotel
1 can of black beans, drained
1 cup of corn (I use frozen but feel free to use a can, drained)
1 package of Frontera Skillet Taco Sauce (My absolute favorite. If you don’t have this or can’t find at your grocery store just use two cans of the enchilada sauce. I just love the smoky flavor this brings)
1 can of red enchilada sauce( small can )
1 tbsp. of cumin
1 package of cream cheese, softened
Place the chicken in your crock put and sprinkle the cumin over the top. Add the remaining ingredients except your cream cheese. You will not use the cream cheese until the last thirty minutes of cooking. Cook on low 6-8 hours or high 4-6 hours. In the last thirty minutes take the lid off and ladle out 1/2 cup of your soup broth that has been cooking. You will use this to mix with your softened cream cheese in a heat safe bowl. Mix together until the cream cheese is completely melted and liquified. Add more broth if needed to mix. Once it is completed mixed together and a liquid you will pour back in to your crock pot. Shred your chicken then mix together. Cover your crock pot and finish cooking for 30 minutes. Ladle in to your bowls and top with crushed tortilla chips and our favorite diced avocados. Enjoy!!
