I spending the day home with my precious children. We are playing the WII, watching fun shows, doing crafts, making yummy food, and reading books. My sweet husband has to work today so praying he has a safe day.
Speaking of yummy foods. I have to share this with you! While we were in Colorado visiting my husband’s family. His aunt made this amazing polenta pizza. I re-created this amazing and healthy dish last night. We. ate. every. bit.of.it. So delicious! So let me share with you. Please excuse the photos taken from my phone.
Roasted Three Pepper Polenta Pizza Casserole
1 packaged Italian Polenta from the store
1 Jar of Spaghetti or Tomato Sauce ( I use a natural organic Marinara Sauce)
1 cup of Mozzarella Cheese
1/2 cup of fresh grated Parmesan Cheese
1 – 2 Red Bell Peppers ( I used 6 mini peppers tri-color orange, red, and yellow)
1 package of pepperoni or prosciutto
First, you will place your peppers on a baking sheet and roast in the oven on 400 degrees until charred and skin can be easily peeled away. Approximately 20 minutes. While your peppers are cooling open you package of polenta and slice in 1″ slices.Place each slice in baking pan. Spoon a tablespoon of tomato sauce over each circle.
Place a pepperoni or slice of prosciutto on top of the tomato sauce. ( I was out of the pepperoni so I didn’t use any meat but it is amazing with it if you like. If you don’t then this can be a vegetarian polenta pizza which was just as amazing). Next peel the roasted skin off the peppers and slice the peppers. Put a pleasing portion of these yummy roasted peppers on each piece of polenta on top of the tomato sauce and pepperoni.
Then you will sprinkle the mozzarella cheese and then the parmesan cheese over the top of the pizzas.
Place in the oven on 350 degrees (preheated from roasting peppers) for 30 minutes. Let stand for five minutes.
Take a spatula and slice through the melted cheese to separate each pizza. Place as many as you like on your plate and have a yummy salad to go with it. Grab your fork and indulge yourself in this sweet and savory delicious meal.
